Chef Marc Therrien, an integral member of Omni La Costa Resort & Spa over the past several years is known for his Southern California flair. Chef Therrien will bring his creative menu concepts to Bistro 65; the resorts three meal a day full-service restaurant, Diversions; a sleek new sports bar and restaurant, and EDGE Adult Pool + Cocktails; the resorts brand new adults-only venue. Chef Marc also does an amazing job overseeing all banquet operations for La Costa.

Working alongside Executive Chef Marc Therrien, Chef Frey blends his passion for cooking and interactivity with guests. Chef updates his menu seasonally to accommodate his personal interest in farm-to-table freshness with local purveyors and fresh seafood, including an array of daily specials for your enjoyment.

Pastry Chef Jaimie Hileman
Our resident pastry chef, Chef Hileman satisfies every sweet tooth by creating desserts that are both aesthetically beautiful and delicious. Responsible for all of the pastry and baking needs of five different restaurants on-property, including BlueFire Grill, Bistro 65 and the Spa Café she creates masterpieces working with fresh, organic ingrendients – a fine complement to meals created by Chef Marc and Frey.
